One individual who made a tremendous impact was Charles Ranhofer, who was named Chef de Cuisine of Delmonico’s NY in 1862.
Ranhofer was responsible for inventing many original dishes during his time at New York City’s most famous downtown restaurant.
Among his many accomplishments was his Baked Alaska creation, which remains on the menu to this day.
