John Mariani of Esquire says it best in Esquire on June 14th,

“The first full-fledged restaurant in the U.S. was founded by a Swiss sea captain named Giovanni Delmonico in 1837 down in the then-burgeoning Wall Street district, with individual, well-set tables, French wines, an à la carte menu, and a lady cashier. Every important personage and famous visitor, including Charles Dickens and William Makepeace Thackeray, dined at “Del’s,” and Samuel F.B. Morse sent the first transatlantic cable from a dining room. Over two centuries, Delmonico’s moved uptown (and closed during Prohibition), but the Beaver Street restaurant, with its marble portals from Pompeii, is still going strong. Along with a steak-and-chops-heavy menu, you can still get Oysters “Diamond Jim Brady,” and the original Lobster Newberg and Chicken a la Keene.”Read more: http://www.esquire.com/blogs/food-for-men/best-old-restaurants-061410#ixzz0r3P21d1H

The Dining at Delmonico’s Cookbook tells it best, “Another Delmonico’s fairy tale begins with a man named Ben Wenber, a sea captain who sailed between Cuba and New York trading fruit. … At some point along about 1876, Wenberg announced that in his travels, he had discovered a new way to cook lobster. He asked Charles Delmonico to bring a chafing dish and a lobster right to his table, where he proceeded to prepare the custacean with crea, cognac, sherry, sweet butter, and cayenne pepper. … Chef Ranhofer (Chef of Delmonico’s) added his own refinements, and the dish was named…”
