The Dining at Delmonico’s Cookbook tells it best, “Another Delmonico’s fairy tale begins with a man named Ben Wenber, a sea captain who sailed between Cuba and New York trading fruit. … At some point along about 1876, Wenberg announced that in his travels, he had discovered a new way to cook lobster.
